Fiesta Stew

3 Tbsp all purpose flour

1/2 Tsp Chili Powder

1/4 Tsp Cinnamon

1/2 Tsp Cumin

1/2 Tsp garlic salt

2 Tbsp Extra Virgin Olive Oil

1/2-2 lbs Beef Cuck 1 inch cubes

1 cup beef broth or beef stock- I use Swanson beef stock as it has no caramel in it

1/2 cup apple juice

5-6 small white potatoes, quartered

1-2 medium sweet potaotes, 2 inch cubes

1 Green Bell pepper, cut into 2 inch strips

1 Red Bell Pepper, cut into 2 inch strips

1 medium yellow onion, chopped

10 0z can of diced tomatoes with green chilies

8 oz can tomato sauce

2 Tbsp honey

2 Granny Smith apples, 1 inch cubes

1 can of dark red kidney beans

2 Tbsp flat leaf parsley

 

Combine flour and spices in a large bowl and mix well. Dredge beef cubes in flour. Add oil to skillet and brown beef, then add to a large pot. Add apple juice and beef stock and simmer 1 hour with lid on. Add potatoes, peppers, onion, tomatoes, tomato sauce, and honey. Stir and simmer an additional 30 minutes. Add apples, kidney beans and parsley and simmer an additional 10-15 minutes. Serves 6-8. Enjoy!! Fyi this dish is very mild in spice, to turn up the heat add more chili powder.
